Ingredients

Scale

Turkey Gravy Ingredients

  • 6 tbsp drippings from turkey roasting pan
  • 6 tbsp plain/all purpose flour
  • 4 cups low sodium chicken broth or stock
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Heat Pan and Flavorings: Place the roasting pan with turkey drippings on the stove over medium heat. Keep garlic, onion, and any other flavorings left in the pan to enhance the gravy’s taste.
  2. Add Flour: When the drippings start sizzling and bubbling, sprinkle in the flour. Stir constantly and cook the flour for about 1 minute to form a roux, which will thicken the gravy.
  3. Incorporate Broth: Gradually pour in the chicken broth while stirring continuously to avoid lumps. Use a whisk if necessary to break up any lumps and mix well with the remaining ingredients in the pan.
  4. Simmer and Thicken: Allow the mixture to simmer gently until it thickens to your desired consistency. Keep in mind the gravy will continue to thicken as it cools. Season with salt and pepper to taste at the end.
  5. Strain Gravy: Pour the gravy through a strainer into a bowl, pressing to extract as much of the flavorful juices from the onion, garlic, and other aromatics. Discard the solids.
  6. Serve: Transfer the smooth gravy into a jug and serve alongside your roasted turkey. To keep the gravy warm for serving, store it in a thermos.

Notes

  • Use low sodium chicken broth to better control the salt level in the gravy.
  • Ensure the flour is cooked well with the drippings to avoid a raw flour taste in the final gravy.
  • The gravy thickens as it cools, so adjust the simmering time accordingly to avoid overly thick gravy.
  • Straining the gravy gives a smoother texture and removes bits of garlic and onion.
  • Keeping the gravy warm in a thermos is helpful during large meals where the turkey is carved over time.
