Instructions

  1. Prepare Oven and Dish: Preheat your oven to 180°C (350°F), or 160°C (320°F) if using a fan-forced oven. Grease a 22.5 cm (9 inch) pie dish thoroughly with butter or lightly spray with cooking oil to prevent sticking.
  2. Mix the Custard: In a mixing bowl, whisk together the 5 large eggs, 1 cup of heavy cream, 1/4 tsp salt, and 1/2 tsp black pepper until fully combined and slightly frothy for a smooth custard base.
  3. Layer the Filling: Scatter most of the diced ham, shredded cheese, and sliced green onion evenly across the base of the prepared pie dish, leaving a little for topping.
  4. Pour and Top: Pour the egg and cream mixture gently over the ham and cheese in the pie dish. Then sprinkle the remaining ham, cheese, and green onion on top for an even distribution throughout the quiche.
  5. Bake the Quiche: Place the pie dish in the oven and bake for approximately 35 minutes. The quiche should be golden on top, and the center will still have a slight wiggle but be mostly set. Be careful not to overbake to maintain its creamy, custardy texture.
  6. Rest the Quiche: Remove the quiche from the oven and allow it to rest for 5 minutes. You’ll notice it may deflate slightly, which is normal and helps it set before serving.
