Instructions
- Preheat and Grease: Preheat your oven to 180°C (350°F). Grease a 10 cup or larger casserole dish well with the unsalted butter to prevent sticking.
- Heat Milk Mixture: In a saucepan over medium-high heat, combine the milk, sugar, and vanilla extract. Stir occasionally until the sugar fully dissolves and the mixture starts to simmer with a foamy surface, but do not let it boil to avoid splitting.
- Combine Ingredients in Baking Dish: Into the greased casserole dish, add the uncooked medium grain white rice, sultanas (or raisins), and cinnamon. Pour the hot milk mixture over these ingredients and give everything a brief stir.
- Cover and Bake: Cover the dish tightly with a lid or aluminum foil. Bake in the preheated oven for 1 hour, making sure to stir every 20 minutes to prevent the rice from settling and burning at the bottom.
- Add Cream and Stir: After baking, remove the dish from the oven and stir in the thickened cream (or butter) thoroughly. The pudding will appear watery immediately, but this will evaporate quickly, leaving a creamy texture.
- Serve: Serve the rice pudding immediately. Enjoy it on its own or elevate the dessert with a scoop of vanilla ice cream for an extra indulgent touch.
