Creamy Cinnamon Rice Pudding (Really Easy!) Recipe

  • Author: Ethan
  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings 1x

Description

This Creamy Cinnamon Rice Pudding is a comforting and easy-to-make dessert that features tender rice slow-baked in milk with warm cinnamon and sweet sultanas. Finished with a splash of cream, it achieves the perfect luscious and creamy texture that oozes with every spoonful. Ideal for a cozy treat, it can be enjoyed warm on its own or with vanilla ice cream for an indulgent twist.

Ingredients

Scale

For the Rice Pudding

  • 1 tbsp unsalted butter (for greasing)
  • 4 cups milk (full or reduced fat)
  • 1/3 cup white sugar
  • 2 tsp vanilla extract
  • 3/4 cup medium grain white rice, uncooked
  • 1/2 cup sultanas or raisins
  • 3/4 tsp cinnamon

To Finish

  • 1/2 cup thickened/heavy cream (or a bit of butter)

Instructions

  1. Preheat and Grease: Preheat your oven to 180°C (350°F). Grease a 10 cup or larger casserole dish well with the unsalted butter to prevent sticking.
  2. Heat Milk Mixture: In a saucepan over medium-high heat, combine the milk, sugar, and vanilla extract. Stir occasionally until the sugar fully dissolves and the mixture starts to simmer with a foamy surface, but do not let it boil to avoid splitting.
  3. Combine Ingredients in Baking Dish: Into the greased casserole dish, add the uncooked medium grain white rice, sultanas (or raisins), and cinnamon. Pour the hot milk mixture over these ingredients and give everything a brief stir.
  4. Cover and Bake: Cover the dish tightly with a lid or aluminum foil. Bake in the preheated oven for 1 hour, making sure to stir every 20 minutes to prevent the rice from settling and burning at the bottom.
  5. Add Cream and Stir: After baking, remove the dish from the oven and stir in the thickened cream (or butter) thoroughly. The pudding will appear watery immediately, but this will evaporate quickly, leaving a creamy texture.
  6. Serve: Serve the rice pudding immediately. Enjoy it on its own or elevate the dessert with a scoop of vanilla ice cream for an extra indulgent touch.

Notes

  • Note 1: You can use either full-fat or reduced-fat milk according to your preference; full-fat milk will yield a richer pudding.
  • Note 2: Medium grain white rice is preferred because it offers the best texture for rice pudding, balancing creaminess and bite.
  • Note 3: Sultanas add natural sweetness and a chewy texture; you can substitute with raisins if preferred.
