Ingredients

Scale

Pork Carnitas

  • Pork carnitas, quantity as desired
  • Small tortillas (corn or flour), quantity as desired

Refried Beans

  • 2 tbsp olive oil
  • 1/4 cup finely chopped onion (white, brown, or yellow)
  • 1 garlic clove, minced
  • 14 oz / 435 g can refried beans (Old El Paso recommended)
  • 1 tsp onion powder (or garlic powder)
  • 1/2 tsp cumin
  • 1/31/2 cup sour cream

Toppings and Garnishes

  • Avocado slices
  • Tomato slices
  • Lime wedges
  • White onions, finely sliced or diced
  • Coriander / cilantro leaves
  • Grated cheese
  • Spicy Tomato Salsa Sauce (for serving)

Instructions

  1. Prepare Refried Beans: Heat 2 tablespoons of olive oil in a saucepan over medium-high heat. Add the minced garlic and 1/4 cup finely chopped onion, sautéing for about 3 minutes until fragrant and translucent.
  2. Add Beans and Spices: Stir in the can of refried beans, 1 teaspoon onion powder (or garlic powder), and 1/2 teaspoon cumin. Mix thoroughly to combine all ingredients evenly.
  3. Add Sour Cream: Add about 1/4 cup sour cream to the bean mixture and stir well. Continue adding more sour cream gradually until you reach your desired creamy consistency. Heat the beans through, then remove the saucepan from heat.
  4. Warm Tortillas: Warm the small corn or flour tortillas according to the packet instructions to make them soft and pliable.
  5. Prepare Pork Carnitas: Arrange the cooked pork carnitas on a serving plate, ready to be piled on the tortillas.
  6. Assemble Refried Beans: Spoon the prepared refried beans onto a plate and sprinkle with grated cheese to let it melt slightly.
  7. Arrange Toppings: Place fresh toppings such as coriander leaves, lime wedges, sliced onion, tomato slices, and avocado slices on a separate plate for easy access and customization.
  8. Serve: Serve the warm tortillas with pork carnitas, refried beans topped with cheese, fresh garnishes, and spicy tomato salsa on the side for dipping or drizzling.

Notes

  • For authentic flavor, use homemade pork carnitas, but pre-cooked or store-bought can be used for convenience.
  • Refried beans can be adjusted for creaminess by adding more or less sour cream to suit your preference.
  • Warm tortillas thoroughly but avoid overheating to prevent them breaking while assembling.
  • Feel free to add extra toppings like jalapeños or hot sauce for more heat.
  • If you want a vegetarian version, replace pork carnitas with grilled vegetables or spiced tofu.
