  • 300–350 g / 10–12 oz pasta of choice (ziti, penne, or spaghetti recommended, Note 2)
  • 2 tsp salt
  • 3/4 cup pasta cooking water
  • Parmesan, for serving

  2. Step 2: Add the pasta and cook according to the package instructions until al dente.
  3. Step 3: Just before draining, scoop out 1 cup of the pasta cooking water and set aside.
  4. Step 4: Drain the pasta in a colander and let it sit for a minute to drain completely.
  5. Step 5: Transfer the pasta to a bowl (avoid using the hot pasta pot).
  6. Step 6: Add the homemade pesto and 1/4 cup of the reserved pasta water. Toss well to coat the pasta evenly in the pesto, adding more pasta water if needed to achieve a silky, saucy texture.
