Ground Beef Mixture

  • 1 pound lean ground beef
  • 1 onion, finely diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder

Quesadilla Assembly

  • 2 cups shredded cheddar or colby jack cheese
  • 4 large burrito-sized tortillas
  • 2 tablespoons butter

Instructions

  1. Cook the Ground Beef: Heat a large skillet over medium heat. Add the ground beef and diced onion, stirring frequently and breaking up the meat as it cooks. Continue until the beef is no longer pink. Drain excess grease or moisture and return the beef to the pan.
  2. Season the Meat: Stir in chili powder, oregano, salt, garlic powder, and cumin. Let the mixture simmer for 2-3 minutes to allow flavors to meld. Remove from heat and set aside.
  3. Prepare the Quesadilla Base: Reduce the skillet heat to medium-low and melt 1/2 tablespoon of butter. Place one burrito-sized tortilla in the skillet and evenly sprinkle about 1/2 cup of shredded cheese over the entire tortilla. Then, evenly spread the cooked ground beef over half of the tortilla.
  4. Cook and Fold the Quesadilla: Allow the quesadilla to cook until the cheese starts melting and the underside is golden brown, about 2-3 minutes. Fold the tortilla in half over the filling. If the outside is not yet browned and crispy, continue cooking until lightly browned, then flip and cook the other side until golden brown.
  5. Repeat and Serve: Repeat the process with the remaining tortillas and ingredients to make 4 quesadillas total. Once cooked, cut each quesadilla into thirds (3 triangles) using a knife or pizza cutter. Serve immediately while hot and melty.

  • Use lean ground beef to reduce excess grease during cooking.
