Instructions
- Prepare cauliflower florets: Cut larger cauliflower florets into halves or quarters to ensure all pieces are roughly the same size for even cooking.
- Boil cauliflower and garlic: Place the cauliflower and whole garlic cloves into a large pot of boiling water and cook for about 10 minutes until the florets become very soft and tender.
- Reserve cooking water: Before draining, scoop out approximately one mug (about 1 cup) of the cooking water and set aside to use later for adjusting the puree consistency.
- Drain and transfer: Drain the cauliflower and garlic thoroughly, then transfer them to a food processor for blending. If you don’t have a food processor, a handheld immersion blender works as well.
- Add ingredients and blend: Add the unsalted butter, shredded parmesan cheese, and sour cream (if using) to the cauliflower. Begin blending without the reserved water until the mixture becomes smooth and creamy.
- Adjust consistency: Slowly add the reserved cooking water, one tablespoon at a time, while continuing to blend to achieve your preferred consistency and ultra-smooth texture.
- Season to taste: Taste the mashed cauliflower and season with salt and pepper as desired, blending briefly to incorporate the seasonings evenly.
- Serve and garnish: Transfer the mashed cauliflower to a serving bowl, drizzle with melted butter, and garnish with chopped parsley and a little freshly ground black pepper if you like.
