  • 400g/14 oz can corn, drained (or 1.5 cups frozen corn thawed)
  • 1 red capsicum/bell pepper, diced into 1cm pieces
  • 1 avocado, diced
  • 1 red onion, diced
  • 3/4 cup coriander/cilantro, roughly chopped
  • 250g/8 oz cherry tomatoes, quartered (or 2 large tomatoes, deseeded and diced)

Dressing Ingredients

  • 2 tbsp lime juice
  • 4 tbsp olive oil
  • 1/4 tsp chipotle powder (or American chili powder)
  • 1/4 tsp cumin powder
  • 2 tsp sugar
  • 1 garlic clove, finely minced
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Instructions

  1. Prepare the dressing: Combine lime juice, olive oil, chipotle powder, cumin powder, sugar, finely minced garlic, black pepper, and salt in a jar. Seal the jar tightly and shake vigorously until all ingredients are well blended into a smooth dressing.
