Instructions

  1. Preheat the oven: Heat the oven to 350˚F and generously coat a 9×5-inch loaf pan with nonstick cooking spray.
  2. Prepare zucchini: Grate the zucchinis using a box grater, then squeeze out excess moisture using a clean tea towel and a colander.
  3. Combine dry ingredients: In a medium bowl, whisk together flour, cinnamon, baking soda, baking powder, salt, and nutmeg.
  4. Mix wet ingredients: In a large bowl, whisk together brown sugar, olive oil, Greek yogurt, eggs, and vanilla extract. Fold in the dry ingredients until just combined.
  5. Add zucchini and walnuts: Fold in the drained zucchini and chopped walnuts until evenly distributed.
