- 3 Tbsp. taco seasoning
- Sea salt (optional)
- 10 oz. can diced tomatoes with chiles (like Rotel)
- 15 oz. can black beans, drained and rinsed
- 8 oz. shredded Mexican cheese blend
- 1 bag Fritos
For Toppings:
- Fresh toppings of your choice
Instructions
- Preheat and Prep: Preheat oven to 400°F. Dice zucchini and onion.
- Cook Ground Beef: Heat oil in a skillet, add ground beef, cook until starting to brown. Drain excess grease if desired. Add onion, zucchini, and taco seasoning. Cook until veggies are softened, adding salt if needed.
- Add Ingredients: Remove from heat, stir in Rotel and black beans.
- Layer Casserole: In a baking dish, layer half of the beef mixture, cheddar cheese, and repeat. Bake until cheese is melted.
- Broil: Optionally broil for a few minutes to brown the cheese.
