Chicken and Seasonings

  • 2 lbs boneless skinless chicken breast (about 34 chicken breasts)
  • 2 cloves garlic
  • A pinch of salt and pepper

  • 2 oz fresh baby spinach
  • 14 oz can artichoke hearts, drained and chopped
  • 8.5 oz jar sun-dried tomatoes, drained with 1 tbsp oil reserved, and chopped
  • 1 cup mozzarella cheese, grated

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the chicken and toppings evenly.
  2. Prepare Chicken and Toppings: Lay the chicken breasts flat in the bottom of a large casserole dish. Season the chicken with salt and pepper. Press the garlic cloves and spread the garlic evenly over the chicken breasts. Then, layer the fresh baby spinach, chopped artichoke hearts, and chopped sun-dried tomatoes on top of the chicken. Drizzle the tablespoon of oil reserved from the sun-dried tomatoes over everything. Finally, sprinkle the grated mozzarella cheese on top.
  3. Bake Chicken: Bake uncovered for 20 minutes. After 20 minutes, loosely cover the casserole dish with aluminum foil and continue baking for an additional 25-30 minutes, or until the internal temperature of the chicken reaches 165°F and the cheese is melted and bubbly.
