For the Turkey Burgers

  • 500g turkey thigh mince
  • 2 spring onions, finely chopped
  • 85g cheddar, grated
  • Salt and pepper, to taste

For the Sweet Potato Chips

  • 1kg sweet potatoes, peeled and cut into chips
  • 3 tbsp olive oil, divided
  • Salt, to taste

To Serve

  • 4 soft wholemeal rolls
  • ¼ cucumber (or 1 small Lebanese cucumber), thinly sliced
  • Tomato ketchup
  • Salad, optional

Instructions

  1. Prepare the Turkey Mixture: In a large bowl, combine the turkey thigh mince, finely chopped spring onions, grated cheddar, salt, and pepper. Mix thoroughly until all ingredients are well incorporated. Shape the mixture into 4 evenly sized burgers. Place the formed patties in the refrigerator to chill for 15 minutes, helping them hold their shape during cooking.
  2. Cook the Sweet Potato Chips: Preheat your oven to 200°C (180°C fan) or Gas Mark 6. Arrange the sweet potato chips on a large non-stick baking tray, drizzle with 2 tablespoons of olive oil, and sprinkle with salt. Toss well to ensure even coating. Bake in the oven for 30 minutes, turning the chips halfway through to ensure even browning and crispiness.
  3. Cook the Turkey Burgers: While the sweet potatoes are baking, heat the remaining 1 tablespoon of olive oil in a large frying pan over medium heat. Add the chilled turkey burgers and cook for about 10 minutes, until golden brown on one side. Flip the burgers and cook for another 10 minutes or until they are fully cooked through, with no pink remaining in the center.
  4. Assemble the Burgers: Split the wholemeal rolls in half. Place each cooked turkey burger inside a roll, add thinly sliced cucumber, and top with a dollop of tomato ketchup. Serve immediately with the baked sweet potato chips and a side salad if desired.
