- Oil for frying (high smoke point)
- Salt to taste

Instructions
- Peel and cut the plantains: Cut the unripe green plantains into 2-inch pieces, with 3-4 pieces per plantain.
- Shape the plantain cups: Use a lemon squeezer or wooden block to press down on each piece, forming a cup. Remove carefully and set aside.
- Fry the cups: Fry the cups again until golden brown, about 3-4 minutes. Drain and season with salt.
- Fill and garnish: Fill each toston cup with your desired filling and garnish with chopped parsley. Enjoy!
In a large pot, heat oil to 400ºF. Fry plantain pieces for 5 minutes, then drain on a paper towel-lined plate.
