Description

Tostones Rellenos are a delicious Cuban dish featuring crispy plantain cups filled with savory meats or seafood. These stuffed plantain cups make for a flavorful and satisfying appetizer or main course.

Ingredients

Scale

Plantain Cups:

  • 2 large unripe green plantains
  • Oil for frying (high smoke point)
  • Salt to taste

Filling Options:

  • Vaca Frita (Cuban Crispy Shredded Beef)
  • Cuban Picadillo
  • Vaca Frita de Pollo (Cuban Shredded Chicken)
  • Camarones Enchilados (Cuban Shrimp Creole)

Instructions

  1. Peel and cut the plantains: Cut the unripe green plantains into 2-inch pieces, with 3-4 pieces per plantain.
  2. In a large pot, heat oil to 400ºF. Fry plantain pieces for 5 minutes, then drain on a paper towel-lined plate.

  3. Shape the plantain cups: Use a lemon squeezer or wooden block to press down on each piece, forming a cup. Remove carefully and set aside.
  4. Fry the cups: Fry the cups again until golden brown, about 3-4 minutes. Drain and season with salt.
  5. Fill and garnish: Fill each toston cup with your desired filling and garnish with chopped parsley. Enjoy!
