Filling
- 6 eating apples (about 800g), peeled, cored and quartered
- 25g butter
- 50g golden caster sugar
- Small pinch of sea salt flakes

- 320g sheet ready-rolled puff pastry
- 1 egg yolk, beaten
Instructions
- Prepare the Toffee Apple Filling: Chop the peeled and cored apples into small chunks. Heat the butter in a pan over medium-high heat until sizzling. Add most of the golden caster sugar, reserving about 1 teaspoon for later. Stir until the sugar dissolves and the mixture becomes sticky. Add the apples, season with a small pinch of sea salt flakes, and cook for 5-6 minutes, stirring occasionally, until the apples soften, start to caramelize, and the juices evaporate. Remove from heat and allow to cool completely.
- Preheat the Oven: Heat the oven to 200°C (180°C fan)/gas mark 6. Place a baking tray inside the oven on the middle shelf to preheat alongside the oven.
- Assemble the Turnover Pie: Unroll the ready-rolled puff pastry on its baking parchment. Spoon the cooled apple mixture over the right side of the pastry, leaving a 1-2cm border around the edges. Brush this border all around the pastry with some of the beaten egg yolk.
- Fold and Seal the Pastry: Fold the left side of the pastry over the apple filling to enclose it fully. Crimp or pinch the edges to seal tightly or press down with a fork. Use the back of a knife to score six triangles on top of the pie and make a few small slits in the center of each triangle to allow steam to escape.
- Final Touches and Baking: Brush the entire top of the pastry with the remaining beaten egg yolk. Scatter the reserved 1 teaspoon of sugar evenly over the top. Carefully transfer the pie, on its parchment, onto the preheated baking tray in the oven.
- Bake: Bake for 25-30 minutes or until the pastry is puffed up and a deep golden brown. Remove from the oven and allow to cool for 10 minutes.
- Serve: Cut the pie into wedges following the scored triangles and serve warm or at room temperature.

- Toffee apple filling can be prepared a day ahead and kept chilled.
- Use a firm eating apple variety like Granny Smith or Braeburn for best results.
- Ensure the baking tray is hot before placing the pastry to encourage puffing.
- Adjust sugar quantity if you prefer a sweeter or less sweet filling.
- For an extra touch, serve with custard or vanilla ice cream.
