Ingredients
Scale
Blueberry Mixture
- 1 ½ cups blueberries
- ⅓ cup packed brown sugar
Frozen Yogurt Base
- 4 cups vanilla yogurt (non-fat, low sugar recommended)
Instructions
- Cook Blueberries: In a small saucepan, combine the blueberries and brown sugar. Cook over low heat for about 10 minutes or until the mixture starts bubbling and the blueberries release their juices.
- Chill Mixture: Remove the saucepan from heat and transfer the blueberry mixture to the refrigerator. Keep it chilled for a few hours or overnight to develop flavor and cool completely.
- Mix with Yogurt: In a large bowl, blend the chilled blueberry mixture with the vanilla yogurt until well combined.
- Freeze Yogurt: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until the yogurt reaches a creamy, frozen consistency.
Notes
- If you don’t have an ice cream maker, blend the cooked and cooled blueberry mixture with the yogurt just until combined but some blueberries remain whole. Pour into an airtight container and freeze for at least 4 hours or overnight until firm. The texture will be less creamy but still delicious.
