Main Ingredients:
- 1 Tbsp olive oil
- 1 cup chopped yellow onion
- 1 lb 93% lean ground beef*
- Salt and black pepper
- 2 tsp minced garlic
Seasonings:
- 1 1/2 Tbsp chili powder
- 1 1/2 tsp cumin
- 1 tsp paprika
Liquids:
- 1 1/4 cups low-sodium chicken broth (plus 1/4 cup more if needed)
- 2 cups whole milk
- 1 can (14.5 oz) fire roasted tomatoes (undrained)
- 1 can (4 oz) mild green chilies (undrained)
Additional Ingredients:
- 12 oz fusilli pasta
- 1 cup (4 oz) shredded sharp cheddar cheese
- 2 Tbsp chopped fresh cilantro or parsley (optional)
Instructions
- Heat olive oil in a saute pan over medium-high heat. Saute onions.
- Add ground beef and cook until browned, breaking it up with garlic.
- Season with spices and cook until fragrant.
- Pour in liquids and bring to a simmer. Add pasta.
- Simmer until pasta is tender.
- Remove from heat and stir in cheese. Thin with more broth if needed.
- Garnish with cilantro or parsley.
