Description

Main Ingredients:

  • 1 Tbsp olive oil
  • 1 cup chopped yellow onion
  • 1 lb 93% lean ground beef*
  • Salt and black pepper
  • 2 tsp minced garlic

Seasonings:

  • 1 1/2 Tbsp chili powder
  • 1 1/2 tsp cumin
  • 1 tsp paprika

Liquids:

  • 1 1/4 cups low-sodium chicken broth (plus 1/4 cup more if needed)
  • 2 cups whole milk
  • 1 can (14.5 oz) fire roasted tomatoes (undrained)
  • 1 can (4 oz) mild green chilies (undrained)

Additional Ingredients:

  • 12 oz fusilli pasta
  • 1 cup (4 oz) shredded sharp cheddar cheese
  • 2 Tbsp chopped fresh cilantro or parsley (optional)

Instructions

  1. Heat olive oil in a saute pan over medium-high heat. Saute onions.
  2. Add ground beef and cook until browned, breaking it up with garlic.
  3. Season with spices and cook until fragrant.
  4. Pour in liquids and bring to a simmer. Add pasta.
  5. Simmer until pasta is tender.
  6. Remove from heat and stir in cheese. Thin with more broth if needed.
  7. Garnish with cilantro or parsley.
