- ⅓ cup cocoa powder

Wet Ingredients:
- 2 tablespoons butter
- ⅔ cup light brown sugar (packed)
- 1 cup mashed sweet potatoes (about 1 large potato)
- ⅓ cup peanut butter
- 1 teaspoon vanilla

- ½ cup chocolate chips
Instructions
- Preheat the oven: Preheat the oven to 350°F. Line an 8×8 inch pan with parchment paper, leaving extra overhanging on the sides.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- Prepare wet ingredients: In another medium bowl, melt the butter in the microwave for 1 minute. Add the brown sugar and whisk until well combined. Stir in the mashed sweet potatoes, peanut butter, and vanilla.
- Combine ingredients: Add the dry ingredients to the sweet potato mixture and mix until combined. Fold in most of the chocolate chips, reserving some to sprinkle on top.
- Bake: Pour the batter into the prepared pan, sprinkle remaining chocolate chips on top. Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
- Cool and serve: Allow the brownies to cool in the pan for 30 minutes, then transfer to a wire rack to cool completely. Cut into 16 squares and enjoy!
