Instructions
- Prepare the sweet potatoes: In a medium bowl, combine the peeled and diced sweet potatoes with olive oil, a pinch of salt, ground black pepper, onion powder, and garlic powder. Mix thoroughly to ensure the sweet potatoes are evenly coated with the seasonings.
- Air fry the sweet potatoes: Transfer the seasoned sweet potatoes into the air fryer basket. Cook at 375 ℉ (190 °C) for 25 minutes, shaking the basket about halfway through at 10 minutes to ensure even cooking and a perfect texture.
- Cook the eggs: While the sweet potatoes are air frying, lightly coat a non-stick pan with oil and heat it over medium. Crack the eggs into the pan carefully, season with salt and ground black pepper to taste, then cover the pan to cook. Cook the eggs until the whites are fully set but the yolks remain runny, achieving a sunny-side-up texture.
- Assemble the bowls: Divide the air-fried sweet potatoes evenly between two bowls. Add a cup of fresh baby spinach to each bowl as a nutritious, fresh base.
- Add eggs and avocado: Top each bowl with two sunny-side-up eggs. Slice the avocado in half, remove the pit, and add half of the avocado to each bowl for creamy richness.
