- 2 1-inch pieces orange peel
- 1/4 cup (50 g) granulated sugar
- 1/4 cup (57 ml) water
- 2 sprigs fresh mint, plus more for garnish
For the Mimosas:
- 1/3 cup (76 ml) Grand Marnier liqueur
- 1 cup (227 ml) freshly squeezed orange juice
- 1 bottle prosecco or champagne
- Orange slices for garnish
Instructions
- Make the Strawberry Simple Syrup: In a medium saucepan over medium heat, combine the strawberries, orange peel, sugar, and water. Simmer, then reduce to medium-low heat, gently mashing strawberries until sugar dissolves and mixture thickens, about 20 minutes. Remove from heat, stir in mint, cool, strain, and chill.
- Prepare the Mimosas: Mix Grand Marnier with chilled simple syrup. Fill a champagne flute with syrup, orange juice, and top with prosecco. Garnish with strawberry, orange slice, and mint. Serve and enjoy!
