Description

Delicious and guilt-free Peanut Butter Cups made with sugar-free dark chocolate and a naturally sweetened peanut butter filling. These bite-sized treats are perfect for satisfying your sweet tooth without added sugar, combining creamy peanut butter and rich chocolate for a low-calorie dessert option.

Ingredients

Scale

Chocolate Layer

  • 2 cups Sugar-Free Dark Chocolate Chips

Peanut Butter Filling

  • 1/2 cup Unsweetened Natural Creamy Peanut Butter
  • 2 tablespoons Truvia® Sweet Complete® Granulated All-Purpose Stevia Leaf Sweetener

Instructions

  1. Prepare the pan: Line a mini muffin pan with 12 mini paper liners to prevent sticking and make removal easy.
  2. Melt chocolate: In a microwave-safe bowl, melt the 2 cups of sugar-free dark chocolate chips in 30-second intervals, stirring after each, until the chocolate is smooth and fully melted.
  3. Form chocolate base: Spoon about 1 teaspoon of the melted chocolate into each muffin liner, spreading it slightly up the sides to create a base layer.
  4. Mix peanut butter filling: In a small bowl, combine the 1/2 cup unsweetened natural creamy peanut butter and 2 tablespoons Truvia® sweetener, stirring until smooth and well blended.
  5. Add peanut butter layer: Place approximately 1 teaspoon of the peanut butter mixture on top of the chocolate base in each liner.
  6. Cover with chocolate: Spoon another teaspoon of melted chocolate over the peanut butter layer to fully cover it, sealing the filling inside.
  7. Set the cups: Place the muffin pan in the freezer for 10-15 minutes or until the peanut butter cups are fully set and firm.
  8. Store: Transfer the peanut butter cups to an airtight container and keep refrigerated for up to one week to maintain freshness.

Notes

  • For easier removal, allow peanut butter cups to warm slightly at room temperature for a few minutes before unwrapping.
  • You can substitute the sugar-free chocolate chips with regular dark chocolate if you prefer, but this will increase sugar content.
  • Ensure the peanut butter is unsweetened and natural for the best result without added sugars.
  • These can also be stored in the freezer for longer shelf life if desired.
