Instructions
- Prepare Strawberry Puree: Place 400g of the hulled strawberries into a food processor and blitz until smooth to create a strawberry puree.
- Chop Remaining Strawberries: Chop the remaining 150g strawberries into small pieces and set them aside for texture in the frozen yogurt.
- Mix Yogurt and Flavorings: Add the Greek yogurt, condensed milk, and vanilla bean paste or extract to the food processor with the strawberry puree and blend again until fully combined.
- Whip the Cream: Pour the double cream into a bowl and lightly whip it until it just holds its shape to add a light and fluffy texture.
- Combine Mixtures: Fold roughly one-third of the strawberry yogurt mixture into the whipped cream using a spatula gently to combine, then fold in the remaining strawberry mixture along with the chopped strawberries evenly.
- Layer Frozen Yogurt and Optional Ingredients: Pour half of the strawberry yogurt mixture into a freezer-proof container. Sprinkle half of the crushed shortbread biscuits and half of the freeze-dried strawberry pieces evenly over the layer.
- Repeat Layers: Cover with the remaining strawberry yogurt mixture, followed by the remaining crushed shortbread biscuits and freeze-dried strawberry pieces to create layers.
- Freeze: Place the container in the freezer and freeze for at least 4 hours until solid.
- Serve: Remove the frozen yogurt from the freezer 10-15 minutes before serving to soften slightly for easier scooping. Enjoy chilled.
- Storage: This frozen yogurt can be stored in the freezer for up to 2 months if kept in an airtight container.
