Description

Strawberry Chia Oat Bites are a wholesome, naturally sweetened snack made with bananas, oats, chia seeds, and fresh strawberries. These bites are perfect for a healthy breakfast on-the-go or a nutritious afternoon treat, combining the goodness of fruits, nuts, and warming spices baked into chewy, flavorful morsels.

Ingredients

Scale

Wet Ingredients

  • 3 Bananas, mashed
  • 1/2 cup Unsweetened Apple Sauce
  • 1 tablespoon Vanilla Extract
  • 1 tablespoon Honey
  • 2 tablespoons Chia Seeds

Dry Ingredients

  • 1 3/4 cups Oats
  • 1/2 cup Slivered Almonds
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Ginger

Fresh Fruit

  • 8 Fresh Strawberries, chopped

Instructions

  1. Mash and Mix Wet Ingredients: In a large bowl, mash the bananas into a smooth paste. Add the unsweetened apple sauce, vanilla extract, honey, and chia seeds. Stir well to combine all wet ingredients evenly.
  2. Prepare Dry Ingredients: In a separate bowl, combine the oats, slivered almonds, ground cinnamon, and ground ginger. Mix these dry ingredients thoroughly to distribute the spices and nuts evenly.
  3. Combine Wet and Dry Ingredients: Pour the dry mixture into the wet mixture bowl. Gently fold them together until all components are well incorporated. Then carefully fold in the chopped fresh strawberries, making sure they are evenly distributed but not mashed.
  4. Shape and Bake: Preheat your oven to 350°F (180°C). Drop spoonfuls of the mixture onto a greased or lined baking sheet, spacing them slightly apart. Bake for about 20 minutes or until the bites turn golden brown on the edges.
  5. Cool and Serve: Remove the bites from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy these nutritious oat bites as a snack or light breakfast.

Notes

  • You can substitute honey with maple syrup or agave nectar for a vegan option.
  • Chia seeds can be replaced with flaxseeds if preferred.
  • For added texture, consider adding dark chocolate chips or dried fruits.
  • Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
  • Ensure the strawberries are fresh and dry to prevent excess moisture in the bites.
