Description

This quick and easy Strawberries and Cream Mug Muffin is a delightful single-serving treat perfect for busy mornings or a fast snack. Made with wholesome ingredients like nonfat Greek yogurt and fresh strawberries, it combines moist texture and sweet berry flavor in just minutes using a microwave.

Ingredients

Scale

Wet Ingredients

  • 3 tablespoons Nonfat Plain Greek Yogurt
  • 1 tablespoon Almond Milk
  • 2 teaspoons Canola Oil
  • 1 Large Egg
  • 1/4 teaspoon Pure Vanilla Extract

Dry Ingredients

  • 2 tablespoons Truvia® Cane Sugar Blend Mix of Stevia Sweetener and Cane Sugar
  • 1/4 cup All-Purpose Flour
  • 1/4 teaspoon Baking Powder
  • Pinch of Salt

Add-ins

  • 1/4 cup Fresh Strawberries, chopped

Instructions

  1. Mix Wet Ingredients: In a large microwave-safe mug, whisk together the nonfat plain Greek yogurt, almond milk, canola oil, egg, Truvia cane sugar blend, and vanilla extract until the mixture is smooth and homogenous.
  2. Add Dry Ingredients: Add the all-purpose flour, baking powder, and a pinch of salt to the wet mixture. Stir gently until just combined to avoid overmixing, which can make the muffin dense.
  3. Fold in Strawberries: Gently fold in the chopped fresh strawberries to distribute the fruit evenly without crushing them.
  4. Microwave Cooking: Microwave the mug on high for 2 to 2 ½ minutes. The muffin is done when the top is set and springs back when lightly touched.
  5. Cool and Serve: Allow the mug muffin to cool slightly before eating, as it will be very hot right after microwaving.

Notes

  • Use a large enough microwave-safe mug to prevent overflow during cooking.
  • Microwave wattages vary; adjust cooking time accordingly to avoid under- or overcooking.
  • For a dairy-free option, substitute yogurt with a plant-based yogurt and almond milk with another non-dairy milk.
  • Fresh strawberries can be substituted with frozen berries, but reduce added liquid slightly.
  • Try topping with a dollop of whipped cream or a drizzle of honey for extra indulgence.
