  • 375g pack sweet shortcrust pastry

Filling

  • 375g mincemeat
  • 50g Madeira cake
  • 50g ground almonds
  • 25g caster sugar
  • 50g butter, softened
  • 1 egg yolk
  • 3 tbsp candied peel
  • 100g marzipan, finely diced
  • 25g toasted flaked almonds

Topping

  • icing sugar, for dusting

Instructions

  1. Prepare the Pastry Cases: Roll out the sweet shortcrust pastry on a lightly floured surface. Using an 8cm cutter, stamp out 12 circles. You may need to re-roll the trimmings to get all 12. Press each circle gently into the holes of a 12-hole bun tin to form pastry cases.
  2. Add the Mincemeat: Spoon a few teaspoons of mincemeat into the base of each pastry case, spreading evenly but not overfilling.
  3. Make the Filling: In a food processor, whizz together Madeira cake, ground almonds, caster sugar, softened butter, and egg yolk until smooth. Transfer this mixture to a bowl, then stir in candied peel and finely diced marzipan until evenly combined.
  4. Fill the Pies: Divide the prepared filling evenly among the pastry cases over the mincemeat layer. Scatter the toasted flaked almonds over the top of each pie for added texture and flavor.
  5. Chill or Freeze (Optional): At this stage, you can cover the unbaked pies and chill them in the refrigerator for up to one day, or freeze for up to three months if you want to prepare ahead.
  6. Bake the Pies: Preheat the oven to 200°C (180°C fan)/Gas mark 6. Bake the pies for 20-25 minutes, or until they are golden and the filling has set.
  7. Cool and Serve: Remove the pies from the oven and dust generously with icing sugar. Once cool enough to handle, carefully lift them out from the tin. Serve warm or at room temperature.
