These Spicy Bean & Avocado Tostados are a delicious vegetarian Mexican-inspired dish featuring grilled flour tortillas topped with a flavorful mix of refried and kidney beans, cherry tomatoes, melted vegetarian cheddar, green chili, fresh avocado slices, and garnished with aromatic coriander leaves. Tostado Base

  • 4 flour tortillas

Bean Mixture

  • 400g can refried beans
  • Big pinch cayenne pepper
  • 200g can kidney beans in water, rinsed
  • 2 handfuls cherry tomatoes, quartered

Toppings

  • 50g vegetarian cheddar
  • 1 green chilli, thinly sliced
  • 1 avocado, halved, stoned and sliced
  • Handful coriander leaves, to serve

Instructions

  1. Preheat and grill tortillas: Heat your grill to medium-high. Place 2 flour tortillas onto a large baking sheet and grill for about 2 minutes until they are slightly toasted and pliable.
  2. Prepare the bean mixture: In a bowl, combine the refried beans, a big pinch of cayenne pepper, rinsed kidney beans, and quartered cherry tomatoes. Mix well to blend all the flavors together.
  3. Assemble the tostados: Spread half of the bean mixture evenly over the grilled tortillas on the baking sheet. Then scatter half of the vegetarian cheddar cheese and half of the thinly sliced green chilli on top of the beans.
  4. Grill until cheese melts: Return the tortillas to the grill and cook them until the cheese melts, which should take a few minutes. Keep a close eye to avoid burning.
  5. Garnish and serve: Carefully transfer the tostados onto serving plates. Top each with half of the sliced avocado and a handful of fresh coriander leaves. Repeat the layering and grilling steps with the remaining tortillas and topping ingredients to make the second batch.

  • Refried beans are not actually fried; they are pinto beans cooked and mashed with spices for a healthy and flavorful base.
