For the Chicken:

  • 4 to 4.5 lb whole chicken
  • 3 Tbsp butter, softened
  • 1 1/2 tsp minced garlic
  • 1 1/2 tsp chopped fresh thyme
  • 1 1/2 tsp chopped fresh rosemary
  • 2 tsp lemon zest, plus lemon wedges for serving
  • Salt and black pepper
  • 1 tsp paprika

For the Vegetables:

  • 1 3/4 lbs red potatoes, cut into 1 1/2 inch chunks
  • 1 lb carrots, peeled and cut into 1-inch chunks
  • 2 tsp minced garlic
  • 1 Tbsp chopped fresh rosemary
  • 2 tsp chopped fresh thyme
  • 1 Tbsp olive oil
  • 3 Tbsp chopped fresh parsley

Instructions

  1. Preheat the Oven: Preheat oven to 425 degrees. Prepare a baking sheet.
  2. Prepare the Chicken: Spatchcock the chicken by removing the backbone and flattening it. Season the chicken.
  3. Prepare the Herb Butter: Combine softened butter, garlic, thyme, rosemary, and lemon zest. Season with salt and pepper.
  4. Season the Chicken: Spread the herb butter under the chicken skin.
  5. Roast the Chicken: Place the chicken on the baking sheet, season with paprika, salt, and pepper. Roast in the oven.
  6. Prepare the Vegetables: Toss potatoes, carrots, garlic, rosemary, thyme, and olive oil. Season with salt and pepper.
  7. Roast Everything: Spread the vegetables around the chicken on the baking sheet. Roast until chicken reaches the desired temperature.
  8. Rest and Serve: Let the chicken rest before carving. Garnish with parsley and serve with lemon wedges.
