  • a small handful parsley, finely chopped

Instructions

  1. Cook the Spaghetti: Bring a large pan of well-salted water to a boil. Add the spaghetti and cook for about 10 minutes, or until al dente, meaning it should retain a slight bite without being too soft.
  2. Prepare the Garlic and Chilli Oil: While the pasta is nearing readiness, heat the olive oil in a frying pan over medium heat. Add the finely chopped garlic and optional chilli and sizzle for about 1 minute until the garlic turns lightly golden and fragrant, being careful not to let it brown as this makes the garlic taste bitter.
  3. Combine Pasta and Oil: Drain the spaghetti thoroughly and immediately add it to the frying pan with the garlicky oil. Toss well to coat the spaghetti evenly with the flavored oil.
  4. Add Parsley and Season: Sprinkle the chopped parsley over the spaghetti, season with salt to taste, and toss again to combine all ingredients evenly.
  5. Serve: Plate the spaghetti aglio e olio immediately while hot for the best flavor experience.
