- 200g spaghetti

- 3 tbsp extra virgin olive oil
- 3–4 garlic cloves, finely chopped
- 1/2 small red chilli, finely chopped (optional)
- a small handful parsley, finely chopped
Instructions
- Cook the Spaghetti: Bring a large pan of well-salted water to a boil. Add the spaghetti and cook for about 10 minutes, or until al dente, meaning it should retain a slight bite without being too soft.
- Prepare the Garlic and Chilli Oil: While the pasta is nearing readiness, heat the olive oil in a frying pan over medium heat. Add the finely chopped garlic and optional chilli and sizzle for about 1 minute until the garlic turns lightly golden and fragrant, being careful not to let it brown as this makes the garlic taste bitter.
- Combine Pasta and Oil: Drain the spaghetti thoroughly and immediately add it to the frying pan with the garlicky oil. Toss well to coat the spaghetti evenly with the flavored oil.
- Add Parsley and Season: Sprinkle the chopped parsley over the spaghetti, season with salt to taste, and toss again to combine all ingredients evenly.
- Serve: Plate the spaghetti aglio e olio immediately while hot for the best flavor experience.
Notes
- Be careful not to burn the garlic as it will impart a bitter taste.
- The chilli is optional and can be adjusted or omitted based on spice preference.
