Scale
Vegetables
- 1 small onion, chopped
- 1 small potato, peeled and chopped
- 400g carrots, peeled and chopped
- ½ small bunch coriander
Spices
- ½ tsp ground coriander
Liquids
- 600ml vegetable or chicken stock
Instructions
- Prepare Ingredients: Chop the onion, potato, and carrots into small pieces to ensure even cooking and easy blending.
- Add Ingredients to Soup Maker: Place the chopped onion, potato, carrots, ground coriander, and stock into the soup maker, making sure not to exceed the maximum fill line.
- Select Smooth Soup Function: Close the lid and select the ‘smooth soup’ function on your soup maker. This will cook and blend the ingredients into a silky smooth soup consistency.
- Add Fresh Coriander: Once the cooking cycle finishes, season the soup with salt and pepper to taste. Add the fresh coriander leaves to the soup maker.
- Blend Again: Blend the soup once more briefly until the fresh coriander is fully incorporated, giving the soup a vibrant flavor and color.
- Serve: Pour the soup into bowls and serve immediately while hot for a warming, nourishing meal.
Notes
- For a vegan version, use vegetable stock instead of chicken stock.
- Adjust the consistency by adding more stock or water if the soup is too thick.
- Season with salt and pepper after the soup maker cycle to control the flavor more precisely.
- Fresh coriander can be substituted with flat-leaf parsley if preferred.
