Chicken:
- 2 tablespoons extra-virgin olive oil
- 2 pounds boneless skinless chicken thighs (trimmed of excess fat)
Seasoning:
- 1 tablespoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes
Additional Ingredients:
- 6 large cloves fresh garlic (peeled and crushed)
- 1/2 cup sliced sundried tomatoes (drained)
- 1/4 cup chicken stock
- 1 cup heavy whipping cream
- 1 cup freshly-grated Parmesan cheese (plus more for serving)
- 3 cups baby spinach leaves (coarsely chopped)
Garnish:
- 1/4 cup fresh basil leaves (for garnish)
Instructions
- Prepare the Chicken: Drizzle the oil in the slow cooker, add chicken, season with Italian seasoning, salt, pepper, red pepper flakes, garlic, and sundried tomatoes.
- Cook: Cook on LOW for 5-6 hours or on HIGH for 3-4 hours.
- Finish the Dish: Remove the lid, stir in cream, cheese, and spinach until wilted.
