Crust

Apple Topping

  • 2 large Honeycrisp apples (peeled and diced small)
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon

Streusel Topping

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/41/2 teaspoon cinnamon (depending on preference)
  • 1/4 teaspoon kosher salt
  • 5 tablespoons cold unsalted butter (diced small)

Cheesecake Filling

  • 16 oz cream cheese (at room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream (at room temperature)
  • 2 large eggs
  • 1/4 cup half & half
  • 1 teaspoon vanilla extract
  • 3 tablespoons all-purpose flour

Instructions

  1. Make the crust: Preheat your oven to 350° F and spray a 9″ springform pan with baking spray. In a microwave-safe medium bowl, combine 1 cup graham cracker crumbs, 1/4 cup butter, and 1 tablespoon sugar. Microwave in 30-second intervals until melted, stirring until mixture resembles wet sand.
  2. Press crust: Press the graham cracker mixture evenly into the bottom and sides of the prepared springform pan, using the bottom of a measuring cup to press firmly.
  3. Bake crust: Bake for 6 minutes until fragrant and golden brown. Remove from oven and cool. Reduce oven temperature to 325° F.
  4. Prepare apples: In a small bowl, toss the diced apples with 3 tablespoons brown sugar and 1 teaspoon cinnamon. Set aside.
  5. Make the streusel: In a medium bowl, combine 1 cup flour, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1/4 to 1/2 teaspoon cinnamon, and 1/4 teaspoon kosher salt. Add cold, diced butter and cut it in with a pastry cutter or fingers until pea-sized clumps form. Place streusel in the freezer while preparing filling.
  6. Prepare cheesecake filling: In a stand mixer bowl fitted with paddle attachment, beat cream cheese, 1/2 cup sugar, and 1/2 cup sour cream on medium speed for about 2 minutes until smooth.
  7. Add eggs: Mix on low-medium speed, adding 2 eggs one at a time, mixing briefly after each addition.
  8. Add liquids and flour: On low speed, add 1/4 cup half & half and 1 teaspoon vanilla extract and mix for 30 seconds. Slowly add 3 tablespoons flour, then increase speed to medium and mix for 2-3 minutes until fully combined.
  9. Assemble cheesecake: Scrape down bowl sides and pour batter into the cooled crust. Sprinkle some streusel over the batter. Using a slotted spoon, drain juice from apples and place apples evenly on top. Add remaining streusel over apples.
  10. Prepare water bath: Place a 9×13 inch pan with about 1 inch of water on the lower oven rack to create steam.
  11. Bake cheesecake: Place the springform pan on the upper rack and bake for 55-65 minutes. The edges should be browned and slightly pulling away, center should still jiggle when gently shaken.
  12. Cool cheesecake: Turn off oven, crack oven door, and let cheesecake cool inside for 1 hour. Remove from oven and cool fully on the countertop.
  13. Chill: Refrigerate cheesecake for at least 4 hours or overnight before serving.
  14. Serve: Enjoy plain or with ice cream or bourbon caramel sauce for added indulgence.
