  • 14 ounces Extra Firm Tofu

Marinade

  • 1 cup Coffee
  • 2 sprigs Fresh Rosemary
  • 2 cloves Garlic
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Salt
  • 1/2 teaspoon Ground Black Pepper

Instructions

  1. Press the Tofu: Slice the extra firm tofu into pieces about the size and thickness of a deck of playing cards. Lay the tofu slices on several layers of paper towels, placing additional paper towels on top. Place a baking sheet on top of the tofu followed by a heavy plate or pan to press out excess moisture. Let it press while preparing the marinade.
  2. Prepare the Marinade: In a bowl, combine 1 cup coffee, 2 sprigs fresh rosemary, 2 minced garlic cloves, 2 tablespoons brown sugar, 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Mix thoroughly to dissolve the sugar and blend flavors.
  3. Marinate the Tofu: Place the pressed tofu slices into a sealable container or Ziploc bag and pour the marinade over them. Seal and refrigerate, allowing the tofu to marinate for at least 30 minutes and up to 6 hours to absorb the flavors deeply.
  4. Bake the Tofu: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the marinated tofu slices evenly on it. Bake for 15 minutes, flipping the slices halfway through to ensure even cooking.
  5. Finish on Grill or Pan: After baking, either grill the tofu on medium-high heat for 2 minutes per side until lightly browned or heat a small amount of oil in a saucepan over medium-high heat and cook the tofu slices 2 minutes per side until golden and crisped.
