Marinade
- 1 cup Coffee
- 2 sprigs Fresh Rosemary

Instructions
- Press the Tofu: Slice the extra firm tofu into pieces about the size and thickness of a deck of playing cards. Lay the tofu slices on several layers of paper towels, placing additional paper towels on top. Place a baking sheet on top of the tofu followed by a heavy plate or pan to press out excess moisture. Let it press while preparing the marinade.
- Prepare the Marinade: In a bowl, combine 1 cup coffee, 2 sprigs fresh rosemary, 2 minced garlic cloves, 2 tablespoons brown sugar, 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Mix thoroughly to dissolve the sugar and blend flavors.
- Marinate the Tofu: Place the pressed tofu slices into a sealable container or Ziploc bag and pour the marinade over them. Seal and refrigerate, allowing the tofu to marinate for at least 30 minutes and up to 6 hours to absorb the flavors deeply.
- Bake the Tofu: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the marinated tofu slices evenly on it. Bake for 15 minutes, flipping the slices halfway through to ensure even cooking.
- Finish on Grill or Pan: After baking, either grill the tofu on medium-high heat for 2 minutes per side until lightly browned or heat a small amount of oil in a saucepan over medium-high heat and cook the tofu slices 2 minutes per side until golden and crisped.
