Instructions

  2. Prepare Roasting Tin: Place the peeled, sliced oranges and thinly sliced red onions into a large roasting tin or baking dish. Drizzle with olive oil and season generously with salt and pepper.
  3. Roast Oranges and Onions: Bake in the preheated oven for 25 minutes until the oranges begin to caramelize at the edges and the onions soften, developing a sweet, mellow flavor.
  4. Preheat the Grill: While the oranges and onions roast, prepare the grill by heating it to high to cook the sausages quickly once added.
  5. Prepare Sausage Meat: Remove the sausages from their casings and break the meat into smaller pieces, spreading them evenly over the roasted oranges and onions in the roasting tin.
  6. Add Cranberries, Honey, and Mustard: Scatter fresh or frozen cranberries over the sausage and orange mixture, then drizzle with honey and wholegrain mustard (or chilli flakes) to add sweetness and a spicy kick.
  7. Grill Sausage Mixture: Slide the roasting tin under the hot grill for 8–12 minutes, allowing the sausage meat to cook thoroughly and brown in spots, adding texture and flavor.
  8. Finish and Serve: Remove the roasting tin from the heat, season with red wine vinegar and scatter the chopped parsley over the top for freshness before serving immediately.
