Ingredients
Scale
Dry Ingredients
- 2 1/4 cups plain / all purpose flour
- 2 1/2 tbsp caster sugar / superfine sugar (or granulated sugar)
- Pinch of cooking / kosher salt
- 4 tsp baking powder
Wet Ingredients
- 1 1/3 cups full fat milk, slightly warmed (not piping hot)
- 1/2 tsp vanilla essence
- 4 large eggs
- 150g / 11 tbsp unsalted butter, melted and slightly cooled (not piping hot)
For Serving
- Butter, softened (strongly recommended)
- Maple syrup (or honey)
- Icing sugar / powdered sugar, for dusting
- Strawberries or other fresh fruit
Instructions
- Whisk dry: Place the flour, sugar, baking powder, and salt in a large mixing bowl and whisk to combine thoroughly.
- Whisk in wet: Add the warmed milk, eggs, and vanilla essence to the dry ingredients, whisking to combine. Then add the melted butter and whisk until the batter is smooth and lump-free. The batter should be pourable but thick, slightly thinner than pancake batter.
- Recommended resting: Cover the batter and refrigerate overnight or for at least 2 hours to achieve softer insides and improved flavor. If you’re short on time, proceed directly to cooking.
- Preheat the waffle maker: Heat your waffle iron according to the manufacturer’s instructions. A non-stick waffle maker is ideal as it won’t require additional oil or butter, especially since the batter contains butter.
- Cooking: Use a ladle to pour just enough batter to cover the waffle iron surface without overflowing. Cook until the waffle is golden brown and crisp. Cooking times vary depending on your waffle maker; expect around 3 1/2 to 6 minutes.
- Serving: Transfer the cooked waffles to plates and serve immediately with softened butter, maple syrup, fresh fruit, and a dusting of powdered sugar. Alternatively, keep waffles warm on a rack in a 70°C (150°F) oven while you continue cooking the rest.
Notes
- Resting the batter improves texture and flavor by allowing the flour to fully hydrate.
- Cooking times may vary significantly based on waffle maker brand and model; monitor closely to avoid burning.
- Use softened butter for serving as it melts better and enhances the taste.
- Fresh fruit such as strawberries adds a refreshing contrast to the rich waffles.
