Wet Ingredients:
- 1 cup (226g) unsalted butter, softened
- 1 1/3 cups (266g) packed light-brown sugar
- 2/3 cup (133g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups (290g) canned pumpkin puree
Mix-ins:
- 1 3/4 cup (290g) semi-sweet chocolate chips
- 1 cup (130g) chopped pecans or walnuts (optional)
Instructions
- Preheat oven and prepare dry ingredients: Preheat oven to 350 degrees. In a mixing bowl, whisk together flour, oats, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
- Cream butter and sugars: In the bowl of an electric stand mixer, cream together butter, brown sugar, and granulated sugar until creamy.
- Add wet ingredients: Blend in egg, vanilla extract, and pumpkin puree. Slowly add in dry ingredients and mix until combined.
- Incorporate mix-ins: Mix in chocolate chips and pecans. Let batter rest for 10 minutes.
- Bake: Scoop dough onto baking sheets and bake for 13-15 minutes.
- Cool and store: Allow cookies to cool on the baking sheet before transferring to a wire rack. Store in an airtight container.
