  • Author: Ethan
  • Total Time: 20 minutes
  • Yield: 3 servings 1x

Description

A quick and flavorful prawn chow mein recipe that combines tender egg noodles with fresh vegetables and succulent prawns, tossed in a savory sauce for a delightful Asian-inspired meal.

Ingredients

Scale

Noodles & Vegetables

  • 3 nests medium egg noodles
  • 140g broccoli, chopped into small florets
  • 140g baby corn, halved
  • 1 red pepper, sliced

Protein

  • 300g prawns

Sauce & Seasoning

  • 1 tbsp olive oil
  • 3 tbsp tomato ketchup
  • 2 tbsp oyster sauce

Instructions

  1. Cook Noodles and Vegetables: Bring a pot of boiling water to a boil, then add the egg noodles, broccoli florets, and halved baby corn. Cook them together for 3-4 minutes until they are tender but still retain some bite. Drain the mixture and set aside.
  2. Sauté Red Pepper: Heat 1 tablespoon of olive oil in a large frying pan or wok over medium heat. Add the sliced red pepper and fry for about 3 minutes until it starts to soften.
  3. Toss Ingredients Together: Add the cooked noodles, broccoli, and baby corn along with the prawns into the pan with the red pepper. Toss everything together gently to combine the flavors evenly.
  4. Add Sauce and Heat Through: Pour in 3 tablespoons of tomato ketchup and 2 tablespoons of oyster sauce over the noodle mixture. Stir well to coat all ingredients and cook for an additional 2-3 minutes until the prawns are cooked through and the dish is piping hot.

Notes

  • If you have leftover roast chicken, shred it and use it along with the prawns for added flavor and protein variety.
  • For a spicier touch, consider adding a pinch of chili flakes or a dash of hot sauce to the sauce ingredients.
  • Ensure prawns are fresh or properly thawed before cooking to maintain texture and taste.
