Description

A creamy and comforting porridge topped with a vibrant quick berry compote, fresh fig slices, and crunchy toasted pistachios, perfect for a wholesome breakfast or snack.

Ingredients

Scale

Porridge

  • 150g porridge oats
  • 100ml milk
  • 450ml water
  • Pinch of salt

Berry Compote & Toppings

  • 120g frozen berries
  • ½ orange, zested and juiced
  • 1 fig, sliced
  • 1 tbsp pistachios, toasted and chopped

Instructions

  1. Cook the Porridge: Combine the porridge oats, milk, 450ml water, and a pinch of salt in a pan. Cook over medium heat for about 5 minutes, stirring occasionally, until the porridge becomes thick and creamy.
  2. Prepare the Berry Compote: While the porridge is cooking, place the frozen berries, orange juice, and orange zest in a microwave-safe bowl. Microwave for 2-3 minutes until the berries are softened and release their juices, creating a quick compote.
  3. Assemble the Dish: Divide the creamy porridge evenly between serving bowls. Spoon the warm berry compote over the porridge, then top each bowl with sliced fig and toasted, chopped pistachios for added texture and flavor.

Notes

  • You can substitute the milk with any plant-based milk to make this recipe dairy-free.
  • Use fresh berries if available, microwaving time may vary.
  • To toast pistachios, heat them in a dry pan over medium heat for 3-5 minutes until fragrant.
  • Adjust water quantities slightly for preferred porridge consistency.
