Instructions
- Marinate the Pork: Combine the pork chops with the fajita seasoning, half of the lime juice, and 1 tablespoon of vegetable oil. Place the mixture in a zip-top bag or container and marinate while you prepare the vegetables.
- Prepare Vegetables: Slice the green and red bell peppers along with the sweet yellow onion into thin strips, setting them aside for cooking.
- Cook Peppers and Onions: Heat the remaining 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the peppers and onions, cooking for 3-4 minutes while stirring occasionally until slightly softened. Remove them from the skillet and set aside.
- Cook Pork Chops: Place the marinated pork chops in a single layer in the hot skillet. Cook undisturbed for 2-4 minutes on one side, then flip and cook for another 2-4 minutes or until the internal temperature reaches 145ºF. Remove the pork chops from the skillet and slice into thin strips.
- Make Lime-Garlic Butter Sauce and Combine: In the same skillet, stir in the butter, pressed garlic, and the remaining lime juice. Cook for 1 minute until fragrant and melted. Remove the skillet from heat, then add the cooked peppers, onions, and sliced pork back into the pan, stirring to combine all ingredients evenly.
- Garnish and Serve: Sprinkle chopped cilantro over the fajita mixture and serve hot. Enjoy your flavorful pork fajitas!
