  • 1 green bell pepper (sliced into thin strips)
  • 1 red bell pepper (sliced into thin strips)
  • 1 sweet yellow onion (sliced into thin strips)

  • 1 tbsp vegetable oil (remaining)
  • 1 tbsp butter
  • 3 cloves garlic (pressed)
  • Chopped cilantro for garnish

Instructions

  1. Marinate the Pork: Combine the pork chops with the fajita seasoning, half of the lime juice, and 1 tablespoon of vegetable oil. Place the mixture in a zip-top bag or container and marinate while you prepare the vegetables.
  2. Prepare Vegetables: Slice the green and red bell peppers along with the sweet yellow onion into thin strips, setting them aside for cooking.
  3. Cook Peppers and Onions: Heat the remaining 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the peppers and onions, cooking for 3-4 minutes while stirring occasionally until slightly softened. Remove them from the skillet and set aside.
  4. Cook Pork Chops: Place the marinated pork chops in a single layer in the hot skillet. Cook undisturbed for 2-4 minutes on one side, then flip and cook for another 2-4 minutes or until the internal temperature reaches 145ºF. Remove the pork chops from the skillet and slice into thin strips.
  5. Make Lime-Garlic Butter Sauce and Combine: In the same skillet, stir in the butter, pressed garlic, and the remaining lime juice. Cook for 1 minute until fragrant and melted. Remove the skillet from heat, then add the cooked peppers, onions, and sliced pork back into the pan, stirring to combine all ingredients evenly.
  6. Garnish and Serve: Sprinkle chopped cilantro over the fajita mixture and serve hot. Enjoy your flavorful pork fajitas!
