These Pizza Egglets are a delightful and easy-to-make breakfast or snack featuring fluffy egg rounds topped with melted mozzarella cheese, turkey pepperoni, and fresh basil. Egg Mixture
- 7 small eggs
- 1 tablespoon whole milk

- 1/2 cup shredded mozzarella cheese
- 18 slices turkey pepperoni
- 2 tablespoons fresh basil
Instructions
- Prepare Egg Mixture: Crack 7 small eggs into a medium mixing bowl and whisk together with 1 tablespoon of whole milk until the yolks are just blended to create a smooth egg mixture.
- Heat Skillet and Prepare Molds: Place a non-stick 10-inch skillet over medium heat, maintaining a temperature roughly around 250°F. Position 3 circular rings or crumpet molds inside the skillet. Optionally, coat the inside of the rings with cooking spray to prevent sticking, though this step is not mandatory.
- Cook Egglets: Ladle about 2 spoonfuls of the egg mixture into each ring, filling them about halfway. Evenly distribute 1/2 cup shredded mozzarella cheese and 3 to 4 slices of turkey pepperoni on top of each. Cook the egglets uncovered for 3 minutes, then cover the skillet with a lid and continue cooking for an additional 3 to 5 minutes until the eggs are fully set and cooked through.
- Remove and Serve: Use a knife or silicone spatula to carefully run along the inside edges of the rings to loosen the egglets. Gently remove them from the molds and serve garnished with 2 tablespoons of fresh basil. Enjoy warm!
