Instructions
- Prepare the egg mixture: In a bowl, beat the 2 eggs thoroughly and add 1 teaspoon of baking powder. Mix well to combine and set aside.
- Mash the bananas: Slice up 2 bananas and mash them in a separate bowl, leaving some chunks for texture to help create fluffy pancakes.
- Combine batter: Gradually add the beaten egg mixture to the mashed bananas, stirring continuously until you form a smooth pancake batter. Set aside.
- Make Nutella swirl: Mix 1 tablespoon of Nutella® with 1 tablespoon of unsalted butter until well combined. Transfer this mixture into a piping bag for easy swirling.
- Cook pancakes: Heat a greased non-stick pan over high heat, then reduce the heat to medium-low. Place an egg mold on the pan, pour pancake batter inside the mold.
- Add Nutella swirl: Using the piping bag, squeeze a spiral of the Nutella and butter mixture on top of the batter in the mold. Let cook for a few minutes until the pancake firms up.
- Flip the pancake: Gently slide a spatula beneath the pancake to check if it is cooked enough to flip without sticking and maintaining its shape. Flip carefully and cook the other side briefly.
- Serve: Stack the cooked pancakes and serve warm topped with fresh fruits and drizzled with maple syrup according to taste.
