Main Ingredients

  • 1 cup Raw Macadamia Nuts
  • 1/2 cup Old Fashioned Rolled Oats
  • 1/2 cup Coconut Flour
  • 1/4 cup Agave Syrup
  • 8 Medjool Dates
  • 1/4 teaspoon Almond Extract
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt

Toppings

  • 1/4 cup Unsweetened Shredded Coconut
  • 1/4 cup Sprinkles

Instructions

  1. Make Macadamia Nut Butter: In a food processor, add 1 cup of raw macadamia nuts and process until smooth and creamy, forming homemade macadamia nut butter.
  2. Add Dry and Sweet Ingredients: Add 1/2 cup old fashioned rolled oats, 1/2 cup coconut flour, and 1/4 cup agave syrup into the food processor with the macadamia nut butter and blend to combine.
  3. Incorporate Dates and Flavorings: Add 8 Medjool dates, 1/4 teaspoon almond extract, 1 teaspoon vanilla extract, and 1/4 teaspoon salt to the mixture. Process until the mixture is sticky and well combined.
  4. Mix in Coconut and Sprinkles: Add 1/4 cup unsweetened shredded coconut and 1/4 cup sprinkles to the mixture and pulse a few times to evenly incorporate.
  5. Chill the Mixture: Transfer the mixture to a bowl and refrigerate for 30 minutes to firm up.
  6. Form the Balls: Using an ice cream scoop or spoon, scoop out portions of the mixture and roll into balls with your hands. Place the balls on a lined baking sheet or plate. Repeat until all mixture is used.
  7. Final Chill and Storage: Cover and refrigerate the energy balls for another 30 minutes. Store in an airtight container in the refrigerator for up to one week or freeze for up to one month.
