Instructions
- Boil potatoes and broccoli: In a large pan, bring water to a boil and cook the new potatoes for 10-12 minutes. Add the broccoli florets for the last 4 minutes until both vegetables are tender. Drain well.
- Cook the salmon: Place the salmon fillets in a microwave-safe dish, add a small splash of water, cover with cling film, and microwave on High for 2½ minutes until the salmon flakes easily.
- Prepare the pan and potatoes: Heat the grill to high. Heat olive oil in a deep frying pan over high heat. Slice the boiled potatoes into chunky pieces and quickly fry them in the pan until golden on the edges.
- Add salmon and broccoli: Flake the microwaved salmon into large chunks and distribute it evenly among the potatoes in the pan along with the broccoli florets.
- Mix eggs with mint and season: Stir the chopped mint, salt, and pepper into the beaten eggs, then pour this mixture gently over the ingredients in the pan.
- Cook the frittata: Reduce heat to low and cook for about 6 minutes until the sides are set and the center is still slightly wobbly.
- Grill to finish: Place the pan under the preheated grill to fully set the frittata and brown the top slightly, about 3-5 minutes.
- Serve: Cut into wedges and serve warm with a crisp green salad for a fresh, wholesome meal.
