For the Skillet:
- 1 tablespoon extra virgin olive oil
- 1 medium red onion, chopped
- 2 cloves garlic, minced
- 2 bell peppers or poblano peppers, chopped
- 1 pound 85% lean ground beef
- 1 package taco seasoning (about 3 tablespoons)
- 8 ounces tomato sauce
- 2 tablespoons tomato paste
- 4-ounce can green chiles
- 15-ounce can black beans, drained and rinsed
- 1/2 cup white rice
- 1 cup beef or chicken broth
- 1/2 cup sliced black olives
- 1 cup grated cheese (cheddar or Mexican blend)
- Fresh cilantro, chopped, for garnish
Instructions
- Saute Vegetables: Heat olive oil in a large skillet over medium heat. Add onion, garlic, and bell peppers. Saute for 3-5 minutes until slightly softened.
- Cook Ground Beef: Push the veggies to one side and add the ground beef to the skillet. Break into small pieces and cook until browned, about 5-7 minutes.
- Combine Ingredients: Mix everything in the pan, then add taco seasoning, tomato sauce, tomato paste, green chiles, and beans. Stir well and cook for 2 minutes.
- Add Rice and Broth: Stir in rice and broth. Bring to a boil, then reduce heat to simmer. Cover and cook for 12-15 minutes until rice is tender.
- Finish with Cheese: Uncover, add olives, and sprinkle cheese over the skillet. Cover briefly until cheese melts.
- Garnish and Serve: Garnish with fresh cilantro before serving.
