Sauce and Salad

  • 100ml natural yogurt
  • 3 tbsp mayonnaise
  • ½ small bunch mint, leaves picked and finely chopped
  • 1 small red onion, finely chopped
  • 1 small red chilli, deseeded and finely chopped
  • ½ cucumber, finely chopped
  • ½ small bunch coriander, finely chopped

Chicken and Assembly

  • 1 rotisserie chicken
  • 3 Little Gem lettuces, halved lengthways
  • 4 tbsp mango chutney
  • 4 wholemeal rolls, halved

Instructions

  1. Prepare the yogurt mint sauce: In a small bowl, mix together the natural yogurt, mayonnaise, and finely chopped mint leaves. Season with salt and pepper to taste. Set this sauce aside to allow the flavors to meld.
  2. Make the cucumber and onion salad: In a separate bowl, combine the finely chopped red onion, deseeded and finely chopped red chilli, cucumber, and coriander. Mix well and set aside to let the flavors combine.
  3. Prepare the chicken: Slice and shred the rotisserie chicken meat, discarding the bones or saving them for stock. Ensure the chicken is evenly shredded to maximize texture in the sliders.
  4. Assemble the sliders: Take the halved wholemeal rolls and spread a layer of mango chutney on the bottom half. Add a layer of shredded chicken, then top with some Little Gem lettuce halves. Spoon over some of the yogurt mint sauce and a helping of the cucumber and onion salad. Cover with the top half of the roll.
  5. Serve and enjoy: Serve the sliders immediately while fresh. Any extra shredded chicken can be enjoyed on the side or saved for another meal.

Notes

  • For a homemade alternative to rotisserie chicken, roast a whole chicken and shred once cooled. Save bones for making a flavorful stock.
  • Adjust the chili quantity to suit your preferred spice level or omit for a milder taste.
  • Wholemeal rolls add fiber and a nutty flavor but feel free to substitute with brioche or white rolls if desired.
