Sauce and Salad
- 100ml natural yogurt
- 3 tbsp mayonnaise
- ½ small bunch mint, leaves picked and finely chopped
- 1 small red onion, finely chopped
- 1 small red chilli, deseeded and finely chopped
- ½ cucumber, finely chopped
- ½ small bunch coriander, finely chopped
Chicken and Assembly
- 1 rotisserie chicken
- 3 Little Gem lettuces, halved lengthways
- 4 tbsp mango chutney
- 4 wholemeal rolls, halved
Instructions
- Prepare the yogurt mint sauce: In a small bowl, mix together the natural yogurt, mayonnaise, and finely chopped mint leaves. Season with salt and pepper to taste. Set this sauce aside to allow the flavors to meld.
- Make the cucumber and onion salad: In a separate bowl, combine the finely chopped red onion, deseeded and finely chopped red chilli, cucumber, and coriander. Mix well and set aside to let the flavors combine.
- Prepare the chicken: Slice and shred the rotisserie chicken meat, discarding the bones or saving them for stock. Ensure the chicken is evenly shredded to maximize texture in the sliders.
- Assemble the sliders: Take the halved wholemeal rolls and spread a layer of mango chutney on the bottom half. Add a layer of shredded chicken, then top with some Little Gem lettuce halves. Spoon over some of the yogurt mint sauce and a helping of the cucumber and onion salad. Cover with the top half of the roll.
- Serve and enjoy: Serve the sliders immediately while fresh. Any extra shredded chicken can be enjoyed on the side or saved for another meal.

- For a homemade alternative to rotisserie chicken, roast a whole chicken and shred once cooled. Save bones for making a flavorful stock.
- Adjust the chili quantity to suit your preferred spice level or omit for a milder taste.
