  • 3 Little Gem lettuces, halved lengthways
  • 4 tbsp mango chutney
  • 4 wholemeal rolls, halved

Instructions

  1. Step 1: In a small bowl, mix the natural yogurt, mayonnaise, and chopped mint together. Season with salt and pepper, then set aside to allow the flavors to meld.
  2. Step 2: In another bowl, combine the finely chopped red onion, red chilli, cucumber, and coriander. Stir gently to mix the fresh salad ingredients.
  3. Step 3: Carefully slice and shred the rotisserie chicken, discarding the bones (or save them for making stock).
