- 1/2 avocado, peeled, pit removed and diced
- 2 tablespoons chopped cilantro
- 1/4 cup roasted unsalted cashews, chopped
- Butter lettuce for serving or lettuce of choice
For the Chili Lime Vinaigrette:
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1/2 teaspoon ancho chile powder or regular chili powder
- Kosher salt to taste
Instructions
- Prepare the Filling: In a medium-sized bowl, gently combine the diced chicken, mango, green onion, jalapeño, avocado, and cilantro.
- Make the Vinaigrette: In a separate small bowl, whisk together lime juice, olive oil, honey, chile powder, and salt.
- Toss with Vinaigrette: Pour the vinaigrette over the chicken mixture and mix until well coated. Adjust seasoning as needed.
- Assemble Wraps: Spoon the chicken filling into lettuce leaves, top with chopped cashews, and serve.
