Lemon & Herb Chicken Club Burger Recipe
Introduction
This Lemon & Herb Chicken Club Burger is a fresh and flavorful twist on a classic favorite. Juicy marinated chicken, crispy bacon, and creamy avocado come together in a deliciously satisfying sandwich perfect for any barbecue or casual meal.

Ingredients
- 4 skinless, boneless chicken breasts
- 8 rashers smoked bacon
- 4 burger buns, split
- 4 slices of your favourite cheese (optional)
- 2 avocados, halved, stoned, peeled and sliced
- 2 tomatoes, sliced
- 4 handfuls of lettuce leaves
- 1 garlic clove
- 2 tsp chopped thyme leaves, or 1 tsp dried thyme
- ½ lemon, juiced
- 3 tbsp olive oil
- 3 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tsp mustard
- small splash of chilli sauce (optional)
Instructions
- Step 1: Crush the garlic with the thyme and a pinch of salt using a pestle and mortar. Add the lemon juice, olive oil, and plenty of cracked black pepper, then mash together to combine into a marinade.
- Step 2: Place the chicken breasts on a board and flatten slightly with a rolling pin until even in thickness. Transfer the chicken to a container, add the marinade, seal, shake well, and chill for up to 1 hour.
- Step 3: Light the barbecue and heat until the coals are ashen or set a gas barbecue to medium heat. Mix the mayonnaise, lemon juice, mustard, and chilli sauce (if using) in a small bowl and keep chilled for the sauce.
- Step 4: Cook the bacon on the barbecue for 3-4 minutes until crisp, then remove to a plate and set aside. Toast the cut side of the buns on the grill where the bacon cooked to soak up the flavorful fat, then set aside.
- Step 5: Grill the marinated chicken breasts for 4-5 minutes on each side until lightly charred. If using cheese, top each chicken breast with a slice and cook a few minutes longer until melted and the chicken reaches 65°C (149°F) internally.
- Step 6: Spread the base of each bun with the prepared sauce, then layer with avocado slices, tomato slices, grilled chicken, crispy bacon, and lettuce. Top with the bun lid, press lightly, and serve immediately.
Tips & Variations
- For a smoky flavor, use smoked paprika in the marinade along with thyme and garlic.
- Swap the mayonnaise sauce for a yogurt-based dressing to lighten the sandwich.
- Use different cheese types like cheddar or mozzarella depending on your preference.
- To make it spicier, add extra chilli sauce or fresh sliced jalapeños to the sauce.
Storage
Store leftover cooked chicken and bacon separately in airtight containers in the refrigerator for up to 2 days. Keep buns and fresh vegetables separate to avoid sogginess. Reheat the chicken gently on a grill or in a pan until warmed through before assembling the burger again.
