  • 1 tsp cooking or kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp canola oil
  • 3 garlic cloves, finely minced
  • 2 brown onions, diced into 1 cm (0.3″) cubes
  • 1 1/2 tbsp tomato paste
  • 2 tsp grated ginger
  • 2 cinnamon sticks
  • 2 1/2 cups low sodium chicken stock or broth
  • 1 cup dried apricots, whole
  • 2–3 tsp lemon zest (about 1 whole lemon)
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 2 tsp ground cardamom
  • 2 tsp turmeric powder
  • 1 1/2 tsp fennel powder
  • 1 tsp cayenne pepper (adjust for spice preference)
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/2 tsp cooking or kosher salt
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup coriander (cilantro) leaves, roughly chopped
