Ingredients for Keto Breakfast SmashBurger Tacos:

  • 1 pound Natural Ground Breakfast Sausage
  • 8 Zero Carb Street Taco Sized Keto Tortillas
  • 1 1/2 cups Shredded Cheddar Cheese
  • 8 large Eggs
  • 1/2 tsp Red Pepper Flakes
  • 1/3 cup Pico De Gallo

Instructions

  1. Separate the sausage into 8 evenly sized balls, and place one on top of each keto tortilla.
  2. Heat a thin layer of oil in a large skillet over medium-high heat.
  3. Press the tortillas, meat side down into the heated skillet, and press the meat down evenly until it has formed a thin patty on the underside of the tortilla.
  4. Sear the smash burger tacos until the meat is browned and cooked through.
  5. Flip the tortillas over to lightly toast the other side.
  6. Remove, and repeat the process until you have cooked all of the smash burger tacos.
  7. Sprinkle each smash burger taco with shredded cheddar cheese.
  8. Crack the eggs into a skillet, and cook them to your liking. You can prepare them sunny side up, fried, or scrambled.
  9. Sprinkle the eggs with red pepper flakes and salt and pepper to taste.
  10. Place one cooked egg on the top of each smash burger taco.
  11. Top each taco with a bit of pico de gallo before serving.
