Chicken and Marinade
- 2 skinless chicken breasts
- Few thyme sprigs, leaves picked
- 1 tbsp olive oil
- 2 tsp jerk seasoning
- Juice of 1 lime, divided
Burger Assembly

- ½ small mango, stoned, peeled and sliced
- 1 tomato, sliced
- 1 Little Gem lettuce heart, shredded
- 2 tbsp mayonnaise and ketchup, to serve (optional)
Instructions
- Flatten the Chicken: Place the chicken breasts between two pieces of cling film and gently bash them with a rolling pin until they are evenly flattened for uniform cooking.
- Prepare the Marinade: In a bowl, combine the thyme leaves, olive oil, jerk seasoning, and half of the lime juice. Stir to mix thoroughly, creating a flavorful marinade.
- Marinate the Chicken: Add the flattened chicken breasts to the marinade. Ensure they are well coated and leave them to marinate for 5 minutes to absorb the spices.
- Cook the Chicken: Heat a griddle pan over high heat until hot. Place the marinated chicken breasts on the pan and cook for 4-5 minutes on each side, or until the chicken is cooked through and has appealing grill marks.
- Toast the Buns: While the chicken cooks, split the bread rolls and toast the cut sides on the griddle pan for 1-2 minutes until lightly browned and crisp.
- Assemble the Burger: Place the cooked chicken breasts on the toasted buns. Top with sliced mango, tomato, and shredded lettuce for freshness and crunch.
- Finish with Lime & Sauce: Squeeze the remaining lime juice over the toppings for a zesty kick. If desired, add mayonnaise and ketchup to enhance the flavor and moisture of the burger.

- For extra heat, add more jerk seasoning or include a dash of hot sauce in the marinade.
- If fresh mango is unavailable, substitute with ripe peach or pineapple slices.
