Chicken & Marinade
- 4 large chicken breasts
- 2 tablespoons garlic, minced
- 2 tablespoons lemon juice
- 1/2 cup water or chicken broth
Salad & Wrap
- 1 bundle romaine lettuce (about 4 to 5 cups), chopped
- 1 cup croutons
- 6 spinach herb wraps
- 1/2 cup Parmesan cheese, shredded
- 1 cup Caesar dressing; more if needed
Instructions
- Cook the Chicken: Place the chicken breasts in the Instant Pot. Drizzle with lemon juice and sprinkle the minced garlic evenly over the chicken. Add 1/2 cup of water or chicken broth to the pot to create steam and keep the chicken moist. Seal the Instant Pot lid and set it to high pressure for 25 minutes. Once the cooking time is up, perform a quick pressure release to safely remove the steam.
- Prepare the Caesar Salad Mix: In a large mixing bowl, combine the chopped romaine lettuce, croutons, and shredded Parmesan cheese. Add the cooked chicken, chopped into bite-sized pieces. Pour in the Caesar dressing and toss everything together until well coated, ensuring every bite is flavorful.
- Assemble the Wraps: Lay out the spinach herb wraps and spoon generous amounts of the chicken Caesar salad mixture onto each wrap. Roll the wraps tightly to enclose the filling. For ease of serving and eating, cut each wrap in half diagonally and serve immediately.
